Brass Boer

It is run under Jonnie Boer, the three-Michelin-star chef of De Librije in Zwolle, with his wife Thérèse as maître-sommelier. The menu is modern European with a Caribbean turn — spicy mussels, Caribbean bass, octopus — and moves between classics from De Librije and dishes built around what the island produces. The Caribbean Journal has rated it the best restaurant in the region.

Open Monday to Saturday for dinner from 17:30 to 22:00; closed Sunday. Tables are on the sand with the sea in front, so book early enough to be seated before the light goes. Reservations on +599 715 5050 are effectively required and worth making before you fly. Prices are the highest on Bonaire, in the class you would expect from this kitchen. Allow three hours, and note that the resort is a ten-minute drive back in the dark along the coast road.
